Polarity is the basis for several types of interactions among water and other molecules. All of them are essential to the structure and function of cells. 

One type of interaction is especially important toward our understanding of the properties of water and how it interacts with biologically important molecules. This property, which is the reason that water is cohesive, is called hydrogen bonding.
